Pita Bread

It makes 8 fluffy pitas. I generally don’t use the kitchen oven for these because the pizza oven makes great pitas. You can also use a pizza stone in a regular oven if you give it plenty of time to heat up.
Ingredients
- 1kg of white flour (I use strong white)
- 10g of fast acting yeast
- 2tsp of salt
- 4tsp of sugar
- 1 heaped teaspoon of baking powder
- 600g of warm water
Method
- Add the dry ingredients and mix together gently
- Mix into a dough and leave for ten minutes
- stretch and fold ten times.
- Leave for ten minutes.
- Repeat steps 3 and 4 three more times
- Oil and bowl and put the dough into it.
- Add a little oil to the top and roll around to cover.
- Cover and leave for an hour to rise
- Place a baking tray in the oven upside down
- Heat your oven to it’s maximum temperature.
- Split into 8 pieces and roll into a ball by stretching the top under the ball.
- Leave to rest for ten minutes or so
- Roll each pita flat (to about 1cm deep)
- Place each into the oven and wait for it to rise up in a dome.
- Once it has risen up (five mins max, 2 mins in the pizza oven), take it out.
- Eat some pita.
